Homemade Marshmallow Fluff Recipe
I have a lot of awesome childhood memories and one of my favorites happened during lunchtime. When I was growing up I knew when I was doing something because I opened my lunch box and find peanut butter and fluff sandwich. I always got them as a special treat since it is a marshmallow sandwich and not the healthiest of options. I love finding this sandwich in my lunch box and I knew when I had kids I was going to make sure they enjoyed this fun treat too.
The first time I made my kids a peanut butter and fluff sandwich, also called a fluffernutter sandwich they didn’t believe me that it was lunch food. They took their first bite though and they were hooked on this amazing sandwich. I don’t make it a regular thing to give them this sandwich, but for a treat, it is our go-to!
While my kids loved the peanut butter and fluff sandwich when we moved from New Jersey to New Orleans I found out the hard way that marshmallow fluff and marshmallow creme are not as popular as they are up north. I found a few brands of marshmallow fluff but not the one I was used to and loved the most.
So I did what I do and I set out to create a homemade marshmallow fluff recipe that was perfect. It took a few tries, no one in the house complained about being taste testers, and then I finally had it right. It was perfect and now it is time to share this homemade marshmallow creme recipe that you can make easily in your own kitchen and skip buying grocery store fluff. I promise you are going to love homemade fluff way more than the jar of marshmallow fluff. I promise this delicious marshmallow fluff recipe is super easy to make and such a simple recipe that anyone can make it.
What is Marshmallow Fluff?
Marshmallow fluff, also sometimes referred to as marshmallow cream or marshmallow creme is a smooth confectionary spread that has the same flavor as marshmallows but a totally different texture. There are lots of uses for this homemade sweet treat.
How do you use Marshmallow Fluff?
The first thing to do after making marshmallow fluff is to get 2 pieces of bread, on one piece spread peanut butter on the other spread marshmallow fluff close the bread up and take a bite.
That is the best sandwich ever, a peanut butter fluff sandwich aka a Fluffernutter sandwich.After you make a few fluffernutter sandwiches you will want to make other things as well, I am sure of it. There are lots of great ways to use homemade marshmallow cream.
Cookie sandwich filling. Instead of using buttercream frosting when you are making chocolate chip sandwich cookies, trade the frosting for some marshmallow creme. It also works well to make cookie sandwiches with peanut butter cookies, hot chocolate cookies, chocolate chip cookies, funfetti cookie sandwiches, or cherry Chocolate Chip Cookies.
Ice cream sundae toppings. Marshmallow Fluff is also great for putting on top of ice cream sundaes and other desserts like brownies.
Make Cupcakes and use Marshmallow Creme Frosting. This Homemade Marshmallow Fluff is the same fluff I use to make my Marshmallow Buttercream.
Make quick s’mores, using the fluff places of marshmallows on top of chocolate between 2 graham crackers without having to worry about melting the marshmallow.
Or in total seriousness here, drop a few spoonfuls on wax paper on a baking sheet and put it in the freezer. Let them freeze completely and then enjoy the frozen marshmallow fluff. Oh it is soo good!
How to Store Marshmallow Fluff
After you have made this homemade marshmallow fluff, if there is any left over you can store it in an airtight container. It will keep for up to 2 weeks stored at room temperature.
Tips for Making Marshmallow Fluff
Use clean dishes. Ok I know that sounds like a total “of course” thing when you are cooking but it is important when you are making marshmallow fluff that your cooking dishes and utensils are clean and dry.
If you do not have an electric stand mixer you can use a hand mixer.
Keep an eye on the thermometer temperature. This is very important as you need things to be at the right temperature when you are combining them, you also do not want to burn the sugar mixture when you are heating it.
Homemade Marshmallow Fluff Ingredients
- water
- granulated white sugar
- clear corn syrup
- egg whites, room temperature
- cream of tartar
- vanilla extract
Homemade Marshmallow Fluff Directions
In a medium saucepan combine your water, sugar, and corn syrup. Place a candy thermometer into the mixture making sure it is not touching the bottom of the pan.
Turn the stove up to medium-high heat bring the mixture up to a boil.
In the clean bowl of your stand mixer add the raw egg whites and cream of tartar and whisk together with the whisk attachment.
While you are whisking watch the thermometer on the stoves.
Once your sugar mixture reaches 225°F increase speed of the stand mixer to high and whip the egg whites until they have formed soft peaks form.
Keep an eye on the sugar mixture on the stove and when it reaches 240°F remove it from the heat, lower the mixer speed to medium speed and slowly pour the sugar mixture into the egg mixture.
Once all of the sugar mixture is poured with the egg whites mixture, again increase the stand mixer speed to high speed again and mix the whole mixture for 7 minutes to form stiff peaks and fluffy.
After 7 minutes, whisk in the vanilla extract until well combined.

- 1 teaspoon cream of tartar
- 2 teaspoon vanilla extract
